Colombia – La Cumbre, Natural Process Coffee

Colombia offers a diverse range of specialty coffees, processed in a variety of styles, and a number of farms are focused on scientific and experimental processing methods.

While the majority of Colombian coffee is washed, this crop from La Cumbre is one of the few naturally processed coffees, with a unique fruity taste. They come from a small farm (11 hectares), at an altitude of 1700 masl and planted with Caturra trees. During the harvest the family employ a team of around 70 local pickers who are all trained to harvest only ripe cherry and for this careful harvesting they are paid a premium. Once harvested the coffee is handsorted carefully to remove any defects and dried on covered patios. The patio drying under cover means that the coffee is fully protected from bad weather. The drying stage takes around 10 days after which the coffee is stored in grainpro bags in a cold store room.
